Spelt is an ancient grain, a cousin of modern wheat, but contains more protein and is easier to digest. Spelt is also an excellent source of dietary fibre, vitamin B2, has high levels of manganese, and is a good source of niacin, thiamin, and copper.

Spelt has high water solubility, so its nutrients are easily absorbed and digested by the body. Although not gluten free some people with a wheat sensitivity can eat spelt.
